Alexandra from Pago Pago American Samoa emailed our staff this exquisite scrambled eggs with hot sauce recipe. To start the recipe, please take out a mixing bowl, and crack your eggs into it. You don't have to use free range eggs in this recipe, however they are healthier than factory farm produced eggs. Once your eggs are inside of the bowl, do a quick inspection to make sure you didn't drop any egg shell pieces into the mixture. Next you will want to rapidly beat your eggs at a diagonal until the egg base is yolk colored. Next whisk in the Louisiana roasted red pepper hot sauce, table salt, ground black pepper, and ground garlic powder. Once your egg mix is done, heat a frying pan over medium heat, then melt your pork grease in the pan. Once the grease is sizzling hot, pour the egg mixture into the pan, scrambling the eggs as they cook. After about ten minutes your eggs should be done, at which point you should dish them up hot.
