While the skillet is heating, you will want to add into it the extra virgin olive oil. Next take out a glass mixing bowl, and add into it the large fresh whole eggs, black pepper, Celtic sea salt, chopped green bell pepper, minced Vidalia onion, and minced garlic clove. Beat these ingredients together until the mixture is even and consistent. Next add the egg mixture to the cooking skillet, and scramble the eggs while they cook. When the eggs reach a stage where they are almost done, you will then want to scramble in the chopped tomatoes. Continue to stir the eggs until they are done, which should be at a point where they are still a little moist, and not overly dry.
