I just received this fried scrambled eggs recipe from Amy of Jefferson City Missouri. To begin the cooking process, first you will want to take out a medium size mixing bowl. Pour into your bowl the large fresh whole eggs, and then vigorously beat them until them form a nice even egg base. You will then want to rapidly stir into this egg mixture the ground dried basil, ground oregano, fine ground kosher salt, coarse ground black pepper, grated Mozzarella cheese, and spicy red cayenne pepper. Once the contents inside of the bowl are even and consistent with a nice distribution of ingredients, you will then want to set the bowl aside. Next take out a nonstick skillet, and heat it over medium heat. Melt the salted margarine inside of this skillet, then pour the egg mixture into the pan. Scramble the eggs while they cook, which should take five to ten minutes. Serve the eggs very hot, with toast layered in fresh creamy mayonnaise.
